A classic pound cake recipe calls for a pound of butter, a pound of sugar and a pound of eggs. Eli fiddled with the ratios and the result is a dense, rich cake--completely old-fashioned. "This" says Eli, "is all-day cake." He happily serves it for breakfast, teatime or for dessert with fresh fruit or ice cream. He uses it to make an English trifle and an Italian tiramisu. Sometimes he just toasts and butters it. The cakes keep well and freeze beautifully.
